What each ingredient does

Sweet potato
Forms the bulk of the dish and provides starch and moisture for a soft, tender texture.
Eggs
Set when baked, giving the mash structure and a light, custard-like body.
Butter
Adds fat and richness, carrying flavour and helping the top brown lightly.
Milk
Adds moisture and softness, loosening the mash so it stays smooth when baked.

The step that matters

Baking in a water bath. Baking the dish in a pan of water keeps the outer edges from overheating. Gentle, even heat lets the egg set smoothly without curdling or drying out.

Swap the onion

How well each one fits the dish's main ingredients (sweet potato, butter, egg, cinnamon, milk, pepper):

  1. Capsicumfits better
  2. Spinachfits better
