Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White flour
Provides the starch structure that holds the loaf together as it bakes.
Eggs
Bind the batter and add structure and richness as they set during baking.
Sugar
Adds sweetness and helps the crumb brown and stay tender.
Vegetable oil
Supplies fat that keeps the bread moist and tender.
Grated zucchini
Adds moisture to the batter, keeping the finished bread moist.
Baking powder
Releases gas in the batter so the loaf rises and becomes light.

The step that matters

Gradually stir in the dry ingredients. Mixing flour into wet ingredients develops gluten, which can make the bread tough if overworked. Stir only until combined so the loaf stays tender.
