Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Their proteins set when heated, giving the filling its firm, sliceable structure.
Lemon juice
Adds acidity that thickens the milk mixture and gives the filling its tart flavor.
Sweetened condensed milk
Provides sweetness and a thick, creamy body to the filling.
Unsalted butter
Adds fat that binds the crushed wafers into a firm crust.

The step that matters

Check that the center is firm before cooling. The egg yolks set as they heat. If the center is still loose, the filling will not firm up as it cools and chills, so the pie may slump when cut.
