What each ingredient does

Dried cracked corn
Provides the starch and body that thicken the pudding as it cooks.
Milk
Forms the creamy liquid base that the corn cooks and thickens in.
Sugar
Adds sweetness and helps give the pudding a smooth, rounded flavour.

The step that matters

Add the morocho and cook at low heat for an hour. Cooking gently keeps the milk from scorching on the bottom of the pan and lets the corn starch swell and soften evenly, giving a smooth rather than lumpy or burnt pudding.

Swap the raisin

How well each one fits the dish's main ingredients (corn, milk, cinnamon, orange, lemon, vanilla, sugar):

  1. Blueberryfits better
  2. Figfits better
  3. Cherryfits better
  4. Raisinthe original
