What each ingredient does

Plantain bananas
Starchy flesh turns tender inside and browns on the outside when fried.
Oil
Conducts heat quickly to cook the bananas and crisp their surface.

The step that matters

Frying only half the bananas at a time. Adding too many pieces at once drops the oil temperature, so the bananas soak up more oil and come out greasy and less crisp. Frying in batches keeps the oil hot enough to brown the surface quickly.
