What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable pudding as they cook.
Potatoes
Form the bulk of the pudding, giving a soft, starchy body.
Single cream
Adds moisture and richness, keeping the custard-like texture tender.
Smoked bacon
Adds savoury, smoky flavour and fat that carries through the dish.
Onions
Add sweetness and depth when softened and browned in the fat.

The step that matters

Baking until set and browned. Eggs set through heat, so underbaking leaves the pudding loose and wet, while overbaking can make it dry and rubbery. Watch for a firm centre and golden top.
