Ingredients

Directions

Make the caramel

  1. Combine sugar and water in a saucepan and stir constantly over low heat until the sugar is completely dissolved.

  2. Increase the heat to high and allow the mixture to boil without stirring until it turns a nice golden color.

  3. Pour the caramel into a cake pan, coating the pan while being careful not to burn your hands from splattering.

Soak and mix the bread

  1. Remove the crusts from the bread and cut it into small cubes; you should have about 4 cups of crumb.

  2. Pour the bread cubes over the milk and allow them to sit for 30–60 minutes.

  3. With your hands, squish the bread until it becomes a single mash; do not use a mixer or food processor.

  4. Beat the eggs with sugar and vanilla until light, then stir the mixture into the bread mash to combine.

Bake and serve

  1. Pour the bread mixture into the prepared pan.

  2. Place the cake tin in a baking dish filled with water and bake in a moderate oven for 50–60 minutes until set.

  3. Cool the pudding, refrigerate overnight, then remove from the mold and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the custard and set the pudding into a sliceable structure as they cook.
Bread
Forms the body of the pudding and soaks up the custard so it holds together.
Milk
Provides the liquid that softens the bread and forms the custard with the eggs.
Sugar
Makes the caramel topping and sweetens the custard.

The step that matters

Cooking the caramel to golden. Sugar darkens quickly once it passes golden, so pulling it too late gives a bitter, burnt flavour. Stirring only until dissolved, then boiling without stirring, keeps the syrup from crystallising.
