What each ingredient does

Beets
Provide the main body and earthy sweetness of the dish.
Butter
Adds richness and fat that carries flavour and gives a glossy coating.
Sour cream
Adds tang and creaminess, and thickens the liquid as it reduces.
Sugar
Adds sweetness that balances the vinegar and the beets' earthiness.
Vinegar
Adds acidity that brightens the flavour and keeps the beet colour vivid.

The step that matters

Adding the sour cream and vinegar. Sour cream can curdle or separate when boiled hard for long. Keeping the heat gentle, with the pan covered first and not stirred, helps the sauce reduce smoothly and stay creamy.
