Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boletuses
Provide the main body and meaty texture of the dish.
Onion
Softens into a sweet, savoury base that flavours the gravy.
Sour cream
Adds richness and a slight tang, and thickens the gravy when heated.
Fat
Carries heat for frying and adds savoury, browned flavour to the mushrooms.

The step that matters

Fry the boletuses in very hot butter. Mushrooms release water when cooked. Very hot fat and constant stirring evaporate that moisture so the mushrooms brown instead of steaming and turning soggy.
