What each ingredient does
- Plantains
- Starch and sweetness that caramelize into a golden, tender surface when fried.
- Oil
- Conducts heat to brown the plantain surface quickly and adds richness.
The step that matters
Sautéing the plantains until lightly browned. Frying at a steady medium heat, in small batches, browns the sugars and starch on the surface while keeping the inside tender. Crowding the pan drops the oil temperature, so the pieces steam and turn greasy instead of browning.
