Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the dough and add richness and structure as they are creamed with sugar.
Butter or margarine
Adds fat for tenderness and a rich, short texture in the biscuit.
Sugar
Sweetens the biscuits and helps create a tender crumb when creamed with eggs.
Baking soda
Reacts with the lemon juice or vinegar to produce gas that lightens the dough.
Flour
Provides the structure that holds the stiff dough together during grinding and baking.

The step that matters

Dissolve the baking soda in the lemon juice or vinegar before adding it. Baking soda needs an acid to react and release gas. Dissolving it in the lemon juice or vinegar lets the reaction start in the dough, so the biscuits rise and stay light rather than dense.
