Ingredients

Directions

Prepare the filling

  1. Heat 1 tablespoon vegetable oil and sauté onions, garlic, ½ teaspoon salt, and chile for about 10 minutes, stirring frequently, until the onions begin to brown.

  2. Add cumin, water, green beans, potatoes, and sweet potatoes to the pan and bring to a boil.

  3. Reduce heat and let the mixture simmer for about 20 minutes, until the vegetables are tender.

  4. Stir in lime juice and pour the vegetable mixture into a lightly oiled baking dish.

Make the topping

  1. While the vegetables are cooking, combine cornmeal, white flour, baking powder, baking soda, remaining ½ teaspoon salt, corn, red bell pepper, and cilantro in one bowl.

  2. Whisk the eggs, buttermilk, and remaining 2 tablespoons oil together in another bowl.

  3. Combine the wet mixture into the dry mixture, folding until just mixed.

Assemble and bake

  1. Preheat oven to 350°F.

  2. Sprinkle cheddar cheese over the vegetable mixture in the baking dish.

  3. Spread the egg/cornmeal mixture evenly over the cheese.

  4. Bake for 30 minutes, until a knife or toothpick inserted into the cornmeal topping comes out clean.

  5. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the cornmeal topping and help it set firm when baked.
Cornmeal
Forms the crumbly, golden body of the topping.
Buttermilk
Adds moisture and acidity that tenderise the topping batter.
Baking powder
Releases gas in the batter so the topping rises and lightens.
Cheddar cheese
Melts into the filling, adding richness and savoury flavour.
Potatoes
Soften during simmering to give the filling body and starch.

The step that matters

Folding the wet mixture into the dry. Stirring only until just mixed keeps the batter tender; overmixing develops gluten from the flour and gives a tough, dense topping.
