Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure and richness as they set.
Butter
Adds richness and a tender crumb, and carries flavor.
Flour
Provides the structure that holds the layers together after baking.
Baked apples
Add moisture and sweet, tart fruit flavor to the filling layers.
Lemon
Adds bright aroma and acidity that balances the sweetness.
Confectioner's sugar
Adds sweetness and a fine dusting finish on the top layer.

The step that matters

Adding the eggs one by one. Adding eggs gradually lets each one emulsify fully into the creamed butter and sugar. If they are added too fast, the mixture can curdle, which makes the batter less smooth and can affect its texture once baked.

Swap the lemon

How well each one fits the dish's main ingredients (butter, sugar, egg, flour, clove, vanilla, apple):

  1. Figfits better
  2. Pearfits better
  3. Peachfits better
  4. Lemonthe original

Fit is the average pairing score against butter, sugar, egg, flour, clove, vanilla, apple. Candidates are from the same food group and used in at least 100 recipes.
