Hungarian-style Pot Roast

Ingredients

Directions

Prepare the meat

  1. Place a heavy pot on the burner and turn the heat to high.

  2. When the pot is hot, put the meat in and sear it on all sides until browned. If the meat sticks, do not worry; it will release when properly seared.

  3. Do not salt the meat; pepper it with fresh ground pepper if desired.

Braise and rest

  1. Remove the pot from the stove, cover it, and transfer it to a preheated oven at 325°F for about 2 hours. Check halfway and turn the roast; do not add water or other liquids.

  2. After two hours, the roast should be richly browned and tender. If it is not tender, leave it in the covered pot in the oven with the heat turned off for another ½ hour.

  3. Transfer the roast to a cutting board and let it rest for about 15 minutes.

Make the gravy and serve

  1. While the roast rests, place the pot back on the burner over medium heat, mix 1½ cups of water with 1 heaping tablespoon of flour, and stir the mixture into the juices in the pot.

  2. Scrape the bottom of the pot with the gravy to collect the caramelized bits.

  3. Season the gravy with salt if needed, slice the roast, and return it to the pot so the meat is covered with gravy before serving.

What each ingredient does

Pot roast
Searing and slow braising turn the tough connective tissue tender and build deep browned flavor.
Flour
Thickens the mixed water and pan juices into a smooth gravy.
Water
Mixed with flour to make the gravy base, loosening the caramelized bits from the pot.

The step that matters

Searing the meat until well browned. Browning drives the Maillard reaction, creating deep flavor and color in the meat and the caramelized bits that later enrich the gravy. Pale searing leaves the gravy flat.
