Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the meat that becomes tender during slow cooking.
Sauerkraut
Adds sourness and tang that balances the sweet paprika and rich pork.
Hungarian sweet paprika
Gives the stew its characteristic red color and sweet, smoky flavor.
Crushed tomato
Adds acidity and moisture that builds the body of the stew.
Sour cream
Stirred in at the end to add richness and a mellow tang.

The step that matters

Add the paprika to the meat and onion mix. Paprika scorches easily at high heat and turns bitter, so it should be stirred in briefly over low heat, off the direct flame if needed, before the liquids go in.

Swap the onion

How well each one fits the dish's main ingredients (pork, meat, tomato, sugar, cream, yogurt, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Mustardfits about as well
  4. Onionthe original

Fit is the average pairing score against pork, meat, tomato, sugar, cream, yogurt, pepper. Candidates are from the same food group and used in at least 100 recipes.
