Trout in Sour Milk
Ingredients
Directions
Prepare the trout
Clean the trout, prepare a frying pan, and fry the trout in a lot of oil.
Make the marinade
Put the chopped garlic and a little salt in the mild sour milk and stir.
Assemble and chill
In a deeper pan, pour the prepared sour milk over the warm fried trout so that each piece of trout is covered with milk.
Pour one spoon of oil in which the trout was fried over the surface. Pour some black pepper.
Cover the pan with aluminum foil and put into a fridge for 4–5 h.

What each ingredient does
- Trout
- Frying firms the flesh and seals the surface before it is soaked in the milk.
- Mild sour milk
- Its acidity softens the fish and gives the dish its tangy flavour.
- Garlic
- Adds a sharp aroma that infuses into the milk during the long chill.
The step that matters
Covering each piece of trout with the sour milk while the fish is still warm. Warm fish absorbs the milk more readily, so the acid can penetrate and flavour the flesh evenly. Making sure every piece is fully covered keeps the fish from drying or tasting uneven during the chill.
Swap the garlic
