Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the main body of the pancakes, with starch that helps bind and crisp them.
Eggs
Bind the grated potato together and help set the cakes as they cook.
Flour
Absorbs excess moisture from the grated potato and helps the cakes hold together.
Onions
Add aroma and savoury flavour that deepens as the cakes fry.

The step that matters

Press the potatoes dry. Grated potato releases a lot of water. Pressing it out before mixing lets the cakes brown and crisp in the hot oil instead of steaming and falling apart.
