Ingredients

  • 1 x 4-lb. duck
  • 1 x tin pineapple slices
  • 2 tbl oil
  • 2 tbl Soy Sauce
  • 1 tbl rum
  • 1/2 cup water
  • 2 tbl Brown Sugar
  • 1 pch salt

Directions

Clean and roast the duck. Cool, remove bones and slice. Drain pineapple slices and dice.

Place duck and pineapple in alternate layers in a casserole.

Add the pineapple juice mixed with oil, soya sauce, rum, water, sugar and salt.

Bake in moderate oven for 1 hour. Serve with rice and green salad.
