What each ingredient does

Butter
Carries the flavour of the ham and vegetables and helps them brown gently.
Flour
Thickens the soup as its starch swells in the hot liquid, giving body.
Chopped onion
Builds savoury, slightly sweet depth as it softens and cooks in butter.
Carrot
Adds gentle sweetness and body to the flavour base.
Lean smoked ham
Contributes smoky, savoury flavour that carries through the soup.
Soy sauce
Adds salty, savoury depth that rounds out the broth.

The step that matters

Add the flour to thicken the soup. Flour must be whisked in smoothly and boiled for long enough; boiling cooks out its raw starchy taste and lets the starch swell fully, while stirring prevents lumps.

Swap the beans
