What each ingredient does

Chicken
Gives the soup its main flavour and body as it simmers and tenderises.
Chicken bullion cubes
Add savoury seasoning to the water, building the broth's depth of flavour.
Achiote seeds
Release a rich red colour into the liquid, giving the soup its colour and mild aroma.
Chinese bean threads
Soften in the broth and add a silky, slippery texture to the soup.
Potatoes (in the method)
Hold their shape in the broth and add starch that thickens it slightly.
