Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Light brown sugar
Adds moisture and a molasses-like caramel flavor to the candy.
White sugar
Provides sweetness and, with the cooking, sets the candy's soft, creamy texture.
Half and half
Adds milk fat and liquid that give the candy a smooth, rich body.
Unsalted butter
Adds fat for a tender, smooth texture and rich flavor.
Light corn syrup
Interferes with sugar crystal formation, helping keep the candy smooth.
Shredded coconut
Adds chewy texture and toasty coconut flavor throughout the candy.

The step that matters

Cook to the soft ball stage. Sugar syrup must reach the correct concentration to set soft and creamy. Undercooking leaves it runny, while overcooking makes it hard and grainy as it cools.

Swap the coconut

How well each one fits the dish's main ingredients (sugar, butter, vanilla, corn, syrup):

  1. Coconutthe original
  2. Figfits about as well
  3. Peachfits about as well
  4. Cherryfits about as well

Fit is the average pairing score against sugar, butter, vanilla, corn, syrup. Candidates are from the same food group and used in at least 100 recipes.
