Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk that becomes tender inside and crisp at the edges.
Eggs
Bind the shredded potatoes together so the kugel holds its shape when sliced.
Onions
Add savory sweetness and moisture that deepens in flavor as the kugel bakes.
Oil
Coats the pan and crisps the bottom and edges while adding richness.

The step that matters

Pour the batter into the hot pan. Hot oil in the pan starts searing the potato mixture on contact, creating a crisp crust and helping prevent sticking. A cold pan would let the kugel absorb oil and bake up greasy and pale.

Swap the clove

How well each one fits the dish's main ingredients (potato, onion, egg, garlic, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Cuminfits better
  4. Clovethe original

Fit is the average pairing score against potato, onion, egg, garlic, pepper. Candidates are from the same food group and used in at least 100 recipes.
