Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Adds moisture and molasses flavor, and helps the crumb turn golden brown.
Butter
Binds the crumb and adds richness and tenderness to the crust.
Cake flour
Provides structure to the crust and filling so the bars hold their shape.
Baking soda
Reacts with the acidic sour cream to lift and lighten the crumb while browning it.
Sour cream
Adds moisture and tang, and its acidity helps the filling set tender.
Egg
Sets the filling as it bakes, giving the bars a firm, sliceable texture.

The step that matters

Baking the filling until set. The filling must be baked until golden on top and fully set; underbaking leaves it runny and it will not slice cleanly. Cooling completely lets the egg proteins firm up further, so cutting too early can crack or smear the bars.
