Ingredients

Directions

Make the rice pudding

  1. In a large cooking pot, add the water, 4 cups of milk, uncooked rice, cinnamon, evaporated milk, vanilla, and nutmeg.

  2. Bring the liquid to a boil.

  3. Boil for about 5 minutes, then add the sweetened condensed milk.

  4. Add a little water to the milk can and empty its contents into the pot; by this time the liquid should be simmering on low heat.

  5. Let the milk just barely simmer, with bubbles breaking only the outside edge of the surface.

  6. As the liquid begins to reduce, add the remaining milk in small increments while continuing to stir.

  7. Stir the mixture as you add the milk so it cooks evenly.

  8. Continue to stir intermittently until the liquid has become a gooey paste.

  9. Add raisins and cook for an additional 10 minutes. Total cooking time 1:15 minutes.

Serve

  1. Serve chilled or at room temperature.

What each ingredient does

Uncooked rice
Its starch swells and thickens the milk, giving the pudding its body.
Milk
Forms the liquid that reduces slowly into a creamy, tender base.
Sweetened condensed milk
Adds sweetness and a thick, rich texture as the mixture cooks down.
Evaporated milk
Adds concentrated milk solids for creaminess and a smooth body.
Raisins
Add sweetness and chewy pockets of fruit throughout the pudding.
Cinnamon
Adds warm aroma that carries through the simmering milk.

The step that matters

Keep the heat low and stir as the milk reduces. Milk sugars and starch settle and scorch on the bottom of the pot at high heat. Gentle simmering and frequent stirring keep the pudding evenly cooked and smooth as it thickens.
