What each ingredient does

Raisins
Provide moisture and natural sweetness as they soften and plump while cooking.
Unsweetened applesauce
Adds moisture and tenderness in place of much of the fat.
Eggs
Bind the batter and add structure as they set during baking.
Cooking oil
Adds fat for a moist, tender crumb.
Cake flour
Forms the structure of the cake as its starches set during baking.
Baking soda
Reacts with the batter to help it rise and lighten.
