Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole wheat flour
Forms the dough's structure, giving the biscuits body and a firm, hard bake.
Egg
Binds the dough together and adds structure as it sets in the oven.
Margarine
Adds fat, which tenderises the dough and helps it brown slightly.
Powdered milk
Adds dry milk solids that promote gentle browning and a richer flavour.

The step that matters

Adding the flour in increments. Flour that is not fully mixed in can leave dry pockets and uneven texture, and overmixing develops gluten and toughens the dough. Mixing well after each addition gives an evenly hydrated, workable dough.

Swap the garlic

How well each one fits the dish's main ingredients (beef, milk, parsley, egg, wheat, flour):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Turmericfits better
  4. Garlicthe original

Fit is the average pairing score against beef, milk, parsley, egg, wheat, flour. Candidates are from the same food group and used in at least 100 recipes.
