Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart base and bulk of the jam.
Granulated sugar
Sweetens the jam and helps it thicken as it cooks down.
Lemon juice
Adds acidity that brightens flavour and supports setting.
Candied ginger
Adds sweet, spicy aroma and chewy pieces throughout the jam.

The step that matters

Cooking until the mixture thickens. Sugar and fruit pectin set as water evaporates during simmering. Stopping too early leaves the jam runny, while overcooking can make it stiff and sugary once cooled.

Swap the rhubarb

How well each one fits the dish's main ingredients (pepper, sauce, sugar, ginger, lemon):

  1. Cardamomfits better
  2. Cinnamonfits better
  3. Turmericfits better
