Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Cooked and pureed, it supplies the tart flavour and the smooth base of the fool.
Quark
Soft cheese that gives the fool its creamy body and mild tang.
Egg whites
Whisked air folded in, giving the fool a light, airy texture.
Bananas
Add sweetness, body and a mellow fruit flavour to the mixture.
Soft brown sugar
Sweetens the rhubarb and adds a light caramel note.

The step that matters

Folding in the egg whites. Folding gently keeps the egg whites' trapped air intact; stirring or beating them in deflates the mixture and leaves the fool dense rather than light.
