Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main fruit flavour and colour, along with natural sweetness and moisture.
Cooked rhubarb
Adds tart flavour and body that balances the sugar.
Lemon juice
Adds acidity that brightens the flavour and sharpens the fruit taste.
Sugar
Sweetens the sherbet and lowers the freezing point, keeping it softer and scoopable.
Heavy cream
Adds fat that makes the texture richer and smoother.

The step that matters

Beating back and forth until smooth. Scraping and beating the partly frozen mixture breaks up ice crystals, so it becomes smooth rather than icy. Serving it immediately keeps the texture from hardening again.
