What each ingredient does

Pumpkin seeds
Provide the main body and nutty flavor that toasting intensifies.
Cooking oil
Carries the salt and helps the seeds brown evenly in the oven.
Salt
Seasons the seeds and draws out flavor during roasting.

The step that matters

Stirring once halfway through roasting. Seeds on the pan edges and bottom can scorch while the middle stays pale. One stir moves them so heat reaches all surfaces, giving even toasting.
