Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk that gives the kugel its body once baked.
Eggs
Bind the grated mixture together and help it set firm as it bakes.
Vegetable oil
Heated in the pan to crisp the outside and add richness to the bake.
Onion
Adds savory flavor and moisture to the potato base.

The step that matters

Heat oil in the pan until it is quite hot. Hot oil in the pan starts searing the potato mixture on contact, which helps create a crisp, golden crust instead of a pale, greasy base.
