Lemon Curd

Ingredients

Directions

Make the curd

  1. Put butter cut into small pieces, sugar, and beaten eggs (yolks of 6 and whites of 4) into a large heavy-based pan.

  2. Add the rind and juice of the lemons.

  3. Stir continuously with a wooden spoon and heat until boiling.

  4. Ensure the mixture reaches jam heat (use a jam thermometer if available).

Jar and store

  1. While the mixture boils, place jars in a warm oven to sterilise them and prevent cracking.

  2. Once boiling, remove the pan from heat and pour the curd into the sterilised jars.

  3. Seal immediately with jam pot covers and elastic bands.

  4. If stored in the fridge, the curd can last for years.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Their proteins thicken and set the curd as it heats.
Butter
Adds fat for a smooth, rich texture.
Sugar
Sweetens the curd and balances the sharp lemon flavour.
Lemons
The juice adds acidity and the rind adds fragrant aroma.

The step that matters

Stirring and heating the eggs. The eggs can scramble if the mixture overheats or is left unstirred. Stirring constantly over steady heat lets the proteins thicken the curd smoothly, and the mixture should reach jam heat without being rushed.
