Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Long-grain rice
Forms the body of the pudding as its starch cooks into a soft, tender base.
Egg yolks
Thicken the custard-like mixture as they set with gentle heat and add richness.
Evaporated milk
Adds creaminess and body to the pudding while keeping it smooth.
Honey
Adds sweetness and a moist, glossy texture to the pudding.

The step that matters

Thickening the egg yolk mixture. Egg yolks thicken when heated gently, but if the heat is too high or stirring stops, they can scramble and turn grainy. Stirring constantly over medium heat keeps the mixture smooth as it thickens.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (rice, olive, honey, sugar, evaporated milk, milk, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Pumpkinfits better
  4. Raisinthe original

Fit is the average pairing score against rice, olive, honey, sugar, evaporated milk, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
