Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green beans
Provide the main body of the dish, cooked until just tender with a crisp bite.
Rice-wine vinegar
Adds bright acidity that balances the oil and sugar in the dressing.
Vegetable oil
Carries the flavours of the dressing and coats the beans with a light fat.
Fresh ginger
Adds a sharp, aromatic warmth to the dressing.
Roasted cashews
Add crunch and a toasted, nutty flavour to the beans.

The step that matters

Cook the beans until just tender. Overcooked green beans turn soft and dull in colour, and cold water drained immediately after cooking stops the cooking and helps them keep a bright green colour and crisp texture.

Swap the onion
