What each ingredient does
- Pork tenderloin
- Provides the lean, meaty centrepiece that roasts through while the sides cook.
- Radicchio
- Wilts when heated, turning soft and adding a slightly bitter note.
- Balsamic vinegar
- Adds acidity and sweetness that brightens the vegetables and pan juices.
- Green beans
- Cook in the skillet until tender, adding texture and substance to the dish.
- Red potatoes
- Roast in the pan, becoming crisp at the edges and creamy inside.
- Onion
- Softens and sweetens as it cooks in the olive oil.
The step that matters
Timing the pork against the skillet vegetables. Pork tenderloin is lean and dries out quickly if overcooked, so it should come out as soon as it is done. The vegetables need their own cooking time, so starting the skillet with about 10 minutes of roasting left keeps both ready together.
Swap the green beans
