What each ingredient does

Bell peppers
Provide the main body and firm bite of the pickle.
Granulated sugar
Sweetens the brine and balances the sharpness of the vinegar.
Vinegar
Acidifies the brine, which preserves the peppers and gives them their tang.
Garlic
Adds aroma and savory flavor that infuses into the peppers.

The step that matters

Leaving ½-inch headspace and processing. Headspace must be correct so the jar seals properly during processing. Too little or too much headspace can prevent a vacuum seal or cause liquid loss, leaving the pickles at risk of spoilage.
