Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red bell pepper
Chars and softens in the broiler, becoming sweet and smoky as its sugars caramelize.
Roasted garlic hummus
Provides creamy moisture and a savory base that binds the filling to the tortilla.
Soft flour tortillas
Act as the pliable wrapper that holds the filling together when rolled.
Olive oil
Conducts heat and helps the pepper halves char evenly under the broiler.

The step that matters

Charring the pepper halves. Pepper skin must blister and blacken under the broiler so it can be peeled off easily. Pale, under-charred skin clings and tears the flesh, and the sweet, smoky flavor depends on the browning.

Swap the garlic
