What each ingredient does

Potatoes
Bulk of the casserole, giving a soft, mashed body that holds the sauce.
Flour
Thickens the butter and milk into a smooth sauce as it cooks.
Butter
Fat that carries the flour and adds richness to the sauce.
Milk
Liquid base of the sauce, which thickens when heated with the flour.
Caerphilly cheese
Melts into the sauce and browns on top for flavour and a golden crust.
Eggs
Hard-boiled halves add firmness and a mild, rich bite to the dish.

The step that matters

Bringing the sauce to a boil. Flour thickens milk only when it reaches a boil and is stirred constantly. Stopping early leaves a thin sauce, while stirring too little can scorch or lump it.

Swap the leek

How well each one fits the dish's main ingredients (potato, cheese, butter, flour, egg, milk, pepper):

  1. Asparagusfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Leekthe original

Fit is the average pairing score against potato, cheese, butter, flour, egg, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
