Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the crumbly crust and thickened topping together.
Butter
Adds fat that makes the crust tender and rich.
Eggs
Set during baking to give the topping a soft, sliceable body.
Sugar
Adds sweetness and helps balance the tartness of the lemon.
Baking powder
Releases gas during baking so the topping rises and turns light.

The step that matters

Pour the topping onto the cooled crust. If the crust is still warm, the butter can soften and the egg topping can start to set unevenly or sink into the base. Waiting for the crust to cool keeps the layers distinct and the topping even.
