Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Provides the structure that holds the loaf together as it bakes.
- Eggs
- Add structure and richness, helping the crumb set as it bakes.
- Shortening
- Adds fat for a tender crumb and moist texture.
- Sugar
- Sweetens the loaf and, in the syrup, adds sweetness and moisture.
- Baking powder
- Releases gas during baking so the loaf rises and becomes light.
- Lemon rind
- Adds bright lemon aroma and flavor to the batter.
The step that matters
Poke holes before pouring the lemon syrup. Holes made with a fork give the sugar and lemon juice channels to soak into the crumb. Without them, the syrup tends to pool on top instead of moistening the whole loaf evenly.
