Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they set with gentle heat and add richness.
Flour
Thickens the sauce so it holds body rather than running thin.
Sugar
Adds sweetness that balances the sharpness of the lemon juice.
Lemon juice
Provides the sharp acidity that defines the sauce's flavour.
Butter
Adds fat for smooth texture and a glossy, rounded mouthfeel.

The step that matters

Cooking the thickening base over boiling water. Egg yolks and starch thicken only with gentle, steady heat. If the mixture gets too hot or is not stirred often, the yolks can scramble and the sauce turns lumpy or grainy. Keeping it over simmering water, not boiling directly, protects the texture.

Swap the orange

How well each one fits the dish's main ingredients (sugar, flour, egg, butter, lemon):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against sugar, flour, egg, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
