Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients
Directions
Make the syrup
Bring the sugar, water, lemon juice and golden syrup to the boil and stir until all the sugar has dissolved.
Cook syrup for 8 minutes over moderate heat.
Cool in the deep freeze till ice cold.
Make the dough
Sift the flour, baking powder and salt together.
Rub the 12.5 ml of butter into the mixture.
Beat the eggs and milk together and cut this mixture into the flour mixture with a spatula.
Add a little extra milk if the dough is too stiff.
Shape and fry
Shape the dough into a sausage and divide it into 6 equal lengths.
Roll each length into a thin rectangular shape on a flour strewn surface.
Spread softened butter on the dough rectangles and sprinkle them with cornflour.
Stack the rectangles on top of each other.
Roll the stack up lengthwise into a cylinder.
Using a sharp knife, cut the roll into 2 cm slices.
Moisten the ends of each little roll and press them together to prevent the roll from unraveling when they're fried.
Deep fry a few rolls at a time in moderately hot oil till they're golden brown.
Remove from oil with a slotted spoon and immediately submerge in the ice-cold syrup (use a potato masher to keep under for a while).
Drain on a wire rack on a tray.
Chill before serving.
Nutrition, whole recipe (rough)
Counts 8 of 10 ingredients. The other 2 aren't in our nutrition table and add nothing above, so the real totals are higher.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cake flour
- Forms the main structure of the dough once mixed with liquid.
- Eggs
- Bind the dough and add richness and structure to the fritters.
- Milk
- Adds moisture so the dough comes together softly.
- White sugar
- Makes the syrup that sweetens and moistens the fried rolls.
- Baking powder
- Releases gas in the dough to help it rise and lighten.
- Golden syrup
- Adds sweetness and a rich flavour to the syrup and helps keep it moist.
The step that matters
Submerging the hot fritters in ice-cold syrup. Hot fried dough soaks up cold syrup quickly, so the syrup must be fully cooled and the rolls held under until absorbed. Pressing the ends shut before frying keeps the spirals from unravelling.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, syrup, flour, butter, egg, milk):
- Vanillafits better
- Raisinfits better
- Figfits about as well
- Lemonthe original
Fit is the average pairing score against sugar, syrup, flour, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
