What each ingredient does

Turkey
Provides the main protein, and cooking it in the thickened sauce keeps the filling moist.
Cornstarch
Thickens the soy-water liquid into a glossy sauce that holds the filling together inside the wrapper.
Spring roll wrappers
Form the thin, crisp shell that browns and encloses the filling when fried.
Bean sprouts
Add crisp texture and moisture to the filling.
Green onion
Adds mild sharp aroma and flavor to the filling.
Soy sauce
Adds salty, savory flavor and color to the filling sauce.

The step that matters

Cool the filling before rolling. Hot filling softens the wrapper and can tear it or cause steam blisters, and a thickened sauce still wet from cooking can leak out during frying. Cooling it until it is only warm lets the wrapper hold and seal properly.

Swap the sesame

How well each one fits the dish's main ingredients (onion, pepper, ginger, garlic, sauce, sugar, turkey):

  1. Sesamethe original
