Strawberries 'n' Cream Cake
Ingredients
Directions
Prepare the pans
Heat oven to 325°F.
Coat the bottoms of 2 round cake pans with cooking spray and line the pans with wax paper, then coat the paper.
Make the batter
In a bowl, whisk the first four ingredients (flour, sugar, baking powder, salt).
In a second bowl, whisk the oil, egg yolks, ½ cup cold water, vanilla, and lemon juice.
Let the mixture sit for 3 minutes.
Stir the oil mixture into the flour mixture until blended. Set aside.
Beat egg whites and cream of tartar until foamy, then beat until stiff peaks form.
Fold one third of the whites into the flour mixture, then fold in the remaining whites.
Divide the batter between the pans.
Bake for 30 minutes or until done.
Assemble
Invert the cakes from the pans and remove the wax paper, then return the cakes to right side up.
Slice one of the cake layers in half. Repeat with the second layer.
Slice 6 cups of the berries and toss in a bowl with 2 tbsp jelly.
Place one cake layer on a pedestal.
Top with 1½ cups of the filling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Provides the structure that holds the light sponge once baked.
- Eggs
- Whites trap air for lift and yolks add richness and set structure.
- Sugar
- Sweetens the cake and helps keep it tender and moist.
- Baking powder
- Releases gas in the batter so the cake rises and becomes light.
- Vegetable oil
- Adds moisture so the cake stays tender after baking.
- Strawberries
- Add fresh fruit flavor and juiciness to the filling.
The step that matters
Folding the whites into the batter. Whipped egg whites hold the air that lifts the cake. Folding gently, in portions, keeps that air from collapsing, so the layers rise tall instead of turning dense.
