What each ingredient does

Eggs
Whites whipped to stiff peaks give the bake its light, airy structure, while yolks enrich it.
Sweet potatoes
Provide the bulk, moisture and soft, creamy body of the bake.
Apple
Cooked and puréed, it adds moisture and a fruity sweetness to the mixture.
Lemon juice
Acidity on the apple slices helps keep them from browning.

The step that matters

Fold in the egg whites. Stiff but not dry whites trap air that lifts the batter. Folding gently, rather than stirring, keeps that air in, so the bake rises and stays light instead of deflating into a dense texture.

Swap the apple
