Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the cake together.
Brown sugar
Adds sweetness, moisture and a deeper flavor to the crumb.
Salad oil
Keeps the cake tender and moist by coating the flour proteins.
Egg
Binds the batter and adds structure as it sets in the oven.
Buttermilk
Adds moisture and acidity that reacts with the soda.
Soda
Reacts with the acidic buttermilk to produce gas that lifts the batter.

The step that matters

Cut through with a knife so frosting can seep into the cake.. Cutting channels through the batter let the topping sink down into the cake instead of staying on the surface. Without them, the topping may stay on top and bake unevenly into the crumb.

Swap the pecans

How well each one fits the dish's main ingredients (flour, sugar, nutmeg, cinnamon, egg, buttermilk):

  1. Almondfits better
  2. Chestnutfits better
  3. Milletfits better
  4. Pecansthe original

Fit is the average pairing score against flour, sugar, nutmeg, cinnamon, egg, buttermilk. Candidates are from the same food group and used in at least 100 recipes.
