What each ingredient does

Eggs
Set to bind the potatoes, sausage and onion into a firm, tender omelet.
Potatoes
Form the bulk of the omelet and brown to add texture and savory flavor.
Sausage
Adds savory, meaty flavor and richness throughout the omelet.
Onion
Browns in the drippings to add sweetness and aroma.
Milk
Thins the egg mixture slightly, keeping the omelet tender and light.
Bacon drippings
Fat for browning the onions and potatoes, adding smoky flavor.

The step that matters

Cover and cook until just set. Eggs turn firm and rubbery when overcooked. Stop once the edges are puffed and the center looks barely set, since residual heat finishes the eggs.
