Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg binds the cream custard so it sets into a sliceable filling rather than runny liquid.
Cornstarch
Thickens the cream mixture as it heats, helping the filling hold its shape when cut.
Heavy whipping cream
Fat and liquid form a rich custard that sets around the mango slices.
Mangoes
Provide the main fruit flavor and moisture for the filling.
Sugar
Sweetens the filling and helps balance the tartness of the fruit.

The step that matters

Partially baking the pie shell. A lightly baked shell helps keep the bottom crisp so it is not soggy under the wet custard and juicy mango filling.
