What each ingredient does

Raw cashews
Provide the nut base that becomes crisp and golden when fried.
Sugar
Dissolves into the water to form a syrup that coats the cashews and adds sweetness.
Water
Dissolves the sugar so it can form a syrup in the saucepan.

The step that matters

Frying until golden brown. Cashews can darken quickly in hot oil and turn bitter once over-browned, so color and timing both need watching. Drain them well so excess oil and syrup do not remain on the surface.
