Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Starch that cooks soft and mashes into a fluffy, creamy base.
Egg yolk
Adds richness and helps the mash hold together and set lightly.
Butter
Adds fat for richer flavour and a smoother, silkier texture.
Milk
Adds moisture so the mash becomes smooth and spreadable.
Cheese
Melts and browns on top, adding savoury flavour and a golden crust.

The step that matters

Checking the heat before baking. If the mash is still hot, baking can dry it and over-brown the top, so a quick broil is used instead; if it has cooled, baking heats it through. Judging the temperature decides which method gives an even, golden top.
